Conservation of Cantabrian anchovies in olive oil

  • After opening the package, make sure that the anchovies are completely immersed in olive oil. The oil creates a protective barrier that keeps the anchovies fresh and prevent oxidation.
  • If you prefer, store the anchovies in an airtight or resealable container, making sure that the container is clean and dry before inserting the anchovies.
  • Store the container in the refrigerator, in the coldest part, to keep the anchovies fresh and prevent the growth of bacteria. The ideal temperature for storage is between 5 ºC and 12 ºC.
  • Check the olive oil level regularly. If the anchovies start to surface, add olive oil to cover them completely.

Conservation of Cantabrian salted anchovies 

  • Store salted anchovies in their original packaging or transfer them to an airtight container.
  • Keep the anchovies covered with a layer of salt. The salt absorbs moisture and helps preserve the freshness of the anchovies. If necessary, you can also place the last layer of anchovy on top of it and a sheet of kitchen paper slightly moistened with water.
  • Store anchovies in salt in a cool, dry place, such as the pantry or a cool cupboard, making sure the container is tightly closed to prevent moisture or contamination.
  • When you want to use anchovies, rinse them thoroughly under a trickle of running water to remove excess salt before use.

Fresh anchovies of Cantabrico can keep their quality for several months, but it is always advisable to consume them in the period indicated in the package to fully appreciate the flavor and freshness.
