BAKED SALMON WITH CANTABRIAN ANCHOVY SAUCE
INGREDIENTS
Fresh salmon – 800g
4 Salted anchovies from Cantabrian
Parsley
2 cloves of garlic
White wine
Evo oil
Salt
Pepper
PREPARATION
- In a pan cook the salmon with a drizzle of oil, salt and pepper. Bake in the oven at 180 ºC for about 15 minutes.
- In a mixer blend the anchovies with garlic, parsley and EVO oil
- When the salmon is cooked, sprinkle with the anchovy sauce
PLATING
Serve the salmon by adding fresh parsley leaves and possibly a few drops of lemon or balsamic vinegar.
