SPAGHETTI WITH SALTED ANCHOVIES
INGREDIENTS
8 Cantabrian Salted Anchovies
Red wine – 500g
2 Tomatoes for salad
Fennel
Evo oil
Juice of a lemon
Lemon slices
Pepper q.b.
PREPARATION
- Remove the anchovies, clean them from the salt. Wash them in a bowl with red wine.
- In a squeezer, prepare a citronette with a part of lemon juice and 4 parts oil and pepper.
- Cut the tomatoes coarsely
PLATING
Place the anchovies on a ceramic plate. Season them with the citronette, add the
tomato and garnish with wild fennel and a slice of lemon.
