RICE WITH CANTABRIAN ANCHOVIES

INGREDIENTS

1/2 cup of oil

1 onion cut into pieces

Cantabrico anchovies in olive oil – 8 fillets

Rice – 500 g

1 liter of broth

1 tablespoon of chopped parsley

1/2 cup grated cheese

Salt

Pepper

Butter

PREPARATION

  1. In a saucepan fry the chopped onion until it takes color. 
  2. Add the rice; fry for a few minutes, stirring until the oil is absorbed.
  3. Add the anchovies and gradually pour the hot broth. Season as needed and continue cooking slowly until the rice is al dente.
  4. Remove from the stove, add the grated cheese and a piece of butter. 

 

PLATING

Serve in a bowl and sprinkle with chopped parsley.
