RICE WITH CANTABRIAN ANCHOVIES
INGREDIENTS
1/2 cup of oil
1 onion cut into pieces
Cantabrico anchovies in olive oil – 8 fillets
Rice – 500 g
1 liter of broth
1 tablespoon of chopped parsley
1/2 cup grated cheese
Salt
Pepper
Butter
PREPARATION
- In a saucepan fry the chopped onion until it takes color.
- Add the rice; fry for a few minutes, stirring until the oil is absorbed.
- Add the anchovies and gradually pour the hot broth. Season as needed and continue cooking slowly until the rice is al dente.
- Remove from the stove, add the grated cheese and a piece of butter.
PLATING
Serve in a bowl and sprinkle with chopped parsley.
